I have strong feelings for my close friend's cousin. She's highly attractive, intellectual, and very independent. The problem I keep running into is, I never read her clues correctly. She would give me an opening, and I would fall right on my face, and not realize it till the next day. At times, everything is going great. Then, there are times when I just give up! I can tell she wants to be with me, but she's not willing to open up as of yet, due to her past relationship. Basically, I need help showing her that I'm gonna be there for her, to take care of her, and to love her.

Just read your situation and I have to say it's a pretty complicated thing that you are going through but I am here to help.
This is my take on this situation this female that you are pursuing does not want to give in on the chase too easy, because females think of romance as the chase, they want to make you feel like they can leave you at any second and that you should show her that you are strong and will pursue her, walk through hot coal, and jump through flaming hoops for her, this is their definition of romance.
So for your situation the chase for her is fun and exciting with her knowing she really does love you back. This only means you should answer back to her with something that will seal the deal. Something similar to girl i will jump through a flaming hoop for you i would (insert corny saying here) for you. She will open up, and though we men like to pretend to be stronger and dont want to do things like this but this is what most females want. As for you giving up that is not an option if you are in love with  this woman she is worth it and from what you explained about her you really love her so giving up should not be an option or it will carry over into your conversations. Another technique is to look at her situation with her life and figure out what is the most thing complicating life for her? once you find that out counter the problems like if she does not like where she is at the moment tell her you will take her away from that place and create a better environment for her etc. hope this helps feel free to continue writing i will be waiting to help anyone who is reading this

As soon as i read you response i tried your technique. at first, i was waiting in limbo. when she finally responded i couldn't believe it. she was actually warming up, n opening up to other possibilities. she actually started initiating conversations. little things like that show improvement. i appreciate the help man
